Stuffed Mushroom Caps

Ingredients Method
14 bite-sized and stuffable mushrooms, such as Criminis 1. Preaheat oven to 350ยฐ. Arrange a cooling rack over a lipped cookie sheet, set aside.
2 roma tomatoes, seeds and juices removed, diced 2. Remove stems from mushroom caps and brush away any dirt. Arrange on rack, gill side up. Lightly spray with olive oil and dust with salt and pepper.
1/2 cup goat cheese 3. Bake caps for 5 minutes. Flip over and bake for an additional 2 minutes. Be sure to watch them, as they will shrink - you don't want too much shrinkage.
1/4 cup whipped cream cheese 4. Combine cheeses, tomatoes, chives, and more pepper in a bowl. Spoon a heaping tablespoon into each mushroom.
3 tablespoons chopped chives 5. Combine panko, salt, and pepper in a bowl. Dip each mushroom upside down in panko, forming a crust. Place back on cookie sheet.
4 tablespoons Panko 6. Return to oven and bake until slightly golden - about 4 minutes.
Olive Oil cooking spray
Salt and pepper to taste

Serving Suggestions

  • These go well on their own as an appetizer or an hors d'oeuvre, or as a side dish

Variations

  • Replace goat cheese with nearly any other cheese โ€“ brie, Parmesan Gouda
  • Try adding other veggies, like chopped broccoli florets, spinach, or caramelized onion
  • Easily make into a carnivorous treat with the addition of crumbled bacon or browned turkey sausage
