Oatmeal Chocolate Chip Cookies


  • ½ cup butter, softened
  • 2/3 cup light brown sugar, packed
  • 1 egg
  • ½ teaspoon vanilla
  • ¾ cup all purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt
  • 1 ½ cup rolled oats
  • 1 ½ cup chocolate chip cookies


  1. Preheat oven 350F
  2. In a large bowl or mixer, mix butter, brown sugar, egg, and vanilla until creamy. In a second bowl, whisk together flour, baking soda, salt, and cinnamon. Add to butter mixture. Once thoroughly combined, stir in oats and chips, as well as walnuts and raisins if you are using them.
  3. Put batter into refrigerator to chill for about half an hour.
  4. Place cookies 2 inches apart on a parchment lined baking sheet. Bake for about 10 – 12 minutes, until golden at the edges. Let sit for a few minutes before moving to a rack to cool completely.
