Mushroom and Thigh Fricassee

Ingredients Method
3-4 boneless skinless chicken thighs 1. In a large skillet over medium heat, pour one half of the olive oil. Once shimmering, add carrots, celery, and onions. Cool until soft and just beginning to brown.
1/2 cup each diced celery, carrots, and yellow onion 2. Add mushrooms and reduce heat to medium low. While cooking, rinse and thoroughly dey chicken. Sprinkle with salt and pepper, set aside.
1 cup sliced white mushrooms 3. Once mushrooms are softened and brown, remove all vegetables from pan. Return pan to high heat and add remaining oil until shimmering.
2 cups vegetable stock 4. Add thighs and cook each side for 5 minutes. Return vegetables to pan and sprinkle flour over contents. Stir thoroughly and allow to cook for approximately 3 minutes.
1/2 cup white wine (something dry works best) 5. Add wine to pan, scraping along bottom. Add vegetable stock and bring pot to a boil.
2 tablespoons olive oil, divided 7. Add additional water if sauce looks too thick.
3 tablespoons all purpose flour 8. Reduce to low, cover, and allow to simmer for 45 minutes.
1/2 teaspoon each dried mustard, paprika, and cayenne pepper combined with flour 9. Serve immediately or refrigerate overnight, reheating on the stove top to reserve.
1 sprig Rosemary
Salt and pepper to taste

Serving Suggestions

  • Pairs well with simply steamed vegetables, such as green beans, peas, or broccoli
  • Because this is a rather rich dish, more complex starches should be avoided - simple rice dishes are encouraged, or roasted potatoes
  • Would pair nicely over a bed of egg noodles

Variations

  • There are many ways to change the way this dish is prepared - mushrooms may be swapped around, stewing vegetables may be alternated, and the base Mirepoix can be substituted for an Italian Soffritto, German Suppengrün, or Cajun Trinity
  • While boneless skinless breasts make a lower calorie serving, bone-in thighs are juicer, and skin-on thighs have that irreplaceable crunch
