 +  * 1 ยฝ  packages active dry yeast (1 1/2 tablespoons)
 +  * 1  tablespoon plus 1/2 cup sugar

 +  * 8 to 8 ยฝ  cups all-purpose flour

 +    - In the bowl of your stand mixer, dissolve yeast and 1 tablespoon sugar in 1 3/4 cups lukewarm water.
 +  -   With the paddle attachment, add softened butter to yeast. Then beat in 4 eggs, one at a time, with remaining sugar and salt. Gradually add flour. When dough holds together, it is ready for kneading. Switch to a bread hook and knead dough for 8-10 minutes. Dough should stick to the bottom of the bowl, but pull away cleanly from the sides.  +  -   Clean out bowl and grease it, then return dough to bowl. Cover with plastic wrap, and let rise in a warm place for 1 hour, until almost doubled in size. Dough may also rise in an oven that has been warmed to 150 degrees then turned off. 
 +  -   Punch down dough, cover and let rise again in a warm place for another half-hour.
 +  -   ​Divide dough in half and cover one half. Divide one loaf's dough into three segments and roll out into an 18" strand, fatter in the middle and tapered at the ends. Reference the below photo to braid the challah from the middle to the ends. Tuck ends under to create a neat loaf. Repeat with second loaf of dough. ​
 +  - Place loaves on a parchment paper lined cookie sheet, at least 2" apart. Beat remaining egg, add 1 tablespoon milk, and brush over loaves.
 +  - Heat oven to 375F. When oven comes up to temp, give loaves a second brushing of egg wash and sprinkle any seeds on top, if desired. Bake for 30-40 minutes, until a probe thermometer inserted into the side reads 200F.

 +  * If time allows, you can braid your loaves then place them in the fridge overnight. Allow them to come up to room temperature before applying the egg wash and baking (approximately 30-40 minutes).
 +  * A probe thermometer is vital for this enriched bread. The fat content as well as the double egg wash make for an almost mahogany color, which will NOT let you know when the bread is done! Try to take the bread'​s temperature by puncturing between the braid strands, to keep the bread looking great. ​
