Bacon and Cheese Pequitos


  • 24 sweet piquanté peppers
  • ½ cup mixed fresh herbs such as parsley, oregano, thyme, chives, and basil
  • 1 clove garlic
  • 8 ounces fresh cream cheese, softened
  • 1 ounce freshly grated parmesan cheese
  • 12 slices microwaveable pre-cooked bacon
  • 24 Toothpicks


  1. Preheat your oven to 350°. Line a cookie sheet with parchment paper, and set a cooling rack on top (or better yet, a jalapeno roaster).
  2. Chop herbs and mince garlic. Add cheeses and whisk everything together until light and fluffy.
  3. Spoon mixture into a large ziptop bag (or cake decorating bag).
  4. Pipe cheese into peppers. Fill entirely - the cheese will not expand.
  5. Slice bacon in half, and wrap one-half bacon slice around each pepper.
  6. Place onto cooling rack or jalapeno roaster. Bake for 15 minutes or until bacon is lightly browned and peppers are soft.
  7. Let cool for 5 minutes before serving.


  • As some people don't like the heat, serve with a cool dipping sauce, such as Avocado Ranch
  • Many delis offer different forms of pickled peppers - or, try pickling your own
  • I like using whipped cream cheese for this recipe, but there are many soft cheese that work well
  • Pre-cooked bacon can be used to minimize bake time and increase the speed at which this dish is presented to party guests.
