Arugula Pesto


  • 2 large handfuls fresh arugula
  • 3 oz freshly grated parmesan or regiano cheeses
  • 1/4 cup walnuts
  • 3 cloves garlic, peeled
  • 1/4 cup olive oil
  • 1 lemon, zested and juiced
  • 1 teaspoon freshly ground black pepper


  1. Rinse arugula well. In a food processor, combine all ingredients. Process until smooth. Serve over pasta, or as a spread for sandwiches or tapas.
